India officially recognises over 1,500 mango cultivars, but fewer than 30 are commercially significant at a national level. The rest are grown locally — in single villages, districts, or orchards — often without formal names outside their native regions.

This is the most debated category in Indian mango culture. Alphonso wins on complexity and finishing notes.Himsagar wins on pure sugar intensity and zero fibre. The honest answer depends on what “sweet” means to you.
Totapuri is the commercial standard for eating raw — firm, tangy-sweet flesh that holds its structure. Raw Kesar is preferred in western India for its tartness when green.
Totapuri dominates commercial pulp production because of yield and consistency. Alphonso pulp is the export and premium standard when flavour matters more than volume.
